Tea Eggs – a popular Chinese snack where boiled eggs are marinated in fragrant tea with soy sauces and spices. It yields a delicate flavor with a beautiful marble pattern on the shell.
Ingredients
- 8 pcs egg
- 2 pcs black tea (bags)
- 1 pcs star anise
- 1 pcs bay leaf
- 1 pcs Chinese cinnamon
- 0.5 tsp Sichuan pepper
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tsp Shaoxing rice wine
- 0.5 tbsp sugar
- 2 tsp salt
- 500 ml water
Steps

Bring enough water to a boil to cover the eggs, carefully place the 8 eggs into it and simmer for 8 minutes over medium heat.

In a separate pot combine black tea, star anise, bay leaf, Chinese cinnamon, Sichuan pepper, dark and light soy sauce, Shaoxing rice wine, sugar, salt and 500 ml of water; bring to a boil and simmer for 3 minutes.

Remove the eggs from the boiling water, transfer them to cold water, cool until touchable temperature and gently crack the shells on all sides.

Place the eggs in an airtight container, pour the prepared marinade over them, seal the lid and let them marinate for 12 to 24 hours.
