Ningmeng ji (柠檬鸡)

This dish features a bright lemon aroma, light texture, and quick preparation. Chicken thighs are braised in soy sauce with lemon, resulting in a tender flavor.
Ingredients
- 1000 g Chicken thighs
- 1 tbsp Vegetable oil
- 4 pcs Green onion
- 4 tbsp Light soy sauce
- 1 tbsp Dark soy sauce
- 1 tbsp Sugar
- 240 ml Water
- 1.5 pcs Lemon
Steps

Remove the bones from the chicken thighs using a sharp knife.

Heat the vegetable oil in a skillet or wok over medium heat. Place the thighs skin-side up, ensuring they lie flat.

When the bottom side is browned, flip the pieces and add the sliced green onion, stir‑frying together.

When the skin turns golden, pour in the light soy sauce, dark soy sauce, sugar, and water. Cover and simmer over medium heat for about 7 minutes.

Remove the lid, flip the chicken skin-side up again, increase the heat to high, and add lemon slices. Cook uncovered for another 5 minutes.

If desired, garnish the dish with finely chopped green parts of the onion and serve.
