Chǎo Dòuyá (炒豆芽)

A simple and tasty dish of mung bean sprouts, quickly cooked in a wok. The recipe also includes tips for growing sprouts at home. Perfect as a light snack or side dish.
Ingredients
- 1 tsp soy sauce
- 2 tsp rice vinegar
- 1 pinch salt
- 1 pinch sugar
- 1 tbsp vegetable oil
- 3 pcs garlic
- 1 pinch Sichuan pepper
- 300 g mung bean sprouts
- 3 pcs chili
- 2 pcs green onion
Steps

Mix soy sauce, rice vinegar, salt, sugar and Sichuan pepper, set the mixture aside.

Heat the wok over high heat until it starts to smoke, then add vegetable oil.

Add minced garlic and Sichuan pepper to the hot wok, stir-fry until fragrant.

Add mung bean sprouts and sliced chili, stir-fry quickly until they slightly wilt.

Pour in the prepared sauce, add sliced green onion, and toss everything quickly.

Stir the dish quickly and serve onto plates.
