Dak Kalguksu (닭칼국수)

Hearty and aromatic Korean chicken soup with thick noodles. The broth is infused with ginger, garlic and green onion, and the noodles are combined with fresh vegetables – zucchini, carrot or potato.
Ingredients
- 1 pcs chicken
- 0.5 pcs onion
- 8 pcs garlic
- 3-4 pcs ginger
- 2 pcs green onion (white part)
- 1 pcs kelp seaweed
- 1 tbsp soy sauce
- 1 tsp sesame oil
- to taste salt
- to taste black ground pepper
- 1 pcs zucchini
- 3 cup wheat flour
- 1 tbsp vegetable oil
- 12 cup water
- to taste homemade noodles
Steps

Mix wheat flour, salt, vegetable oil and gradually add 0.75 cup water, kneading the dough until smooth.

Cover the dough with plastic wrap and let it rest for 30 minutes.

Roll the dough into thin sheets, fold them several times, cut into strips and dust with flour to obtain homemade noodles.

In a large pot place the chicken, add 12 cups of water, onion, garlic, ginger, white parts of green onion, soy sauce, sesame oil, salt, black ground pepper and kelp seaweed. Bring to a boil, skimming the foam.

Reduce heat, cover with a lid and simmer for about 40 minutes until the chicken becomes tender.

Season the sliced zucchini with salt and let it sit for 15 minutes, then squeeze out excess moisture.

Let the zucchini rest for another 15 minutes without any further action.

Remove the chicken from the broth, separate the meat from the bones, cut it into small pieces and mix with minced garlic, salt and pepper.

Add the homemade noodles, prepared zucchini, sliced green onion, soy sauce and sesame oil to the ready broth. Stir and serve hot.
