Dalgona

Traditional Korean “fluffy” candy made from sugar and baking soda. Light, crunchy, reminiscent of airy marshmallow, often served on a stick.

    Gather all ingredients and the necessary cookware.

    Place the sugar (1,5 tablespoon) into a small saucepan and set it over low‑medium heat. When the sugar begins to melt around the edges, stir with a wooden stick.

    Continue stirring constantly, monitoring the temperature, until the sugar fully melts without lumps.

    Remove the saucepan from the heat, keep it away from the flame, and quickly fold in the baking soda (1/16 teaspoon).

    Vigorously stir the mixture 20–25 times until the soda fully dissolves and the mass turns a light caramel color.

    Pour the resulting foamy mass onto a baking sheet lined with parchment paper or a silicone mat, using a rubber spatula. If desired, insert a lollipop stick into the center.

    Allow the candy to cool for 15–20 seconds, then gently tap it to check adhesion, and press it onto the base for about 4–5 seconds to achieve the desired thickness.

  8. Dalgona step 8

    Immediately cut the shape using a cookie cutter, gently pressing it but not fully piercing. Remove the cutter.
