Douchi ji (豆豉鸡)

A simple yet flavorful chicken recipe in black bean sauce. Requires minimal ingredients and only 15 minutes of cooking, and the taste evokes traditional Chinese cuisine.
Ingredients
- 370 g chicken
- 1 tbsp cornstarch
- 1 pinch salt
- 2 tbsp water
- 2.5 tbsp neutral cooking oil
- 3 pcs green onion
- 2 pcs chili pepper
- 2 tbsp black bean sauce
Steps

Cut the chicken into pieces, add cornstarch, salt and water, mix well so that the pieces are coated with a sticky mixture.

Add 1 teaspoon of neutral cooking oil to the mixture, stir and let marinate for 10 minutes.

Heat the wok over high heat, pour in 1 tablespoon of oil and spread evenly over the surface.

Place the marinated chicken in the hot wok in a single layer, fry until a light‑brown crust forms, then quickly turn and fry the other sides.

Remove the chicken from the wok while it is still slightly pink inside.

Add the remaining ½ tablespoon of oil to the wok, then add green onion and chili pepper, stir‑fry quickly for 30 seconds until the onion softens.

Return the chicken to the wok, add black bean sauce and stir‑fry for another minute until the chicken is fully cooked.

Serve the dish immediately with steamed rice or other side dishes.
