Dubu Kimchi (두부김치)

Kimchi stir‑fried with pork, served alongside tofu that can be boiled, steamed, or pan‑fried. The dish is quick to prepare (about 20 minutes) and combines the spicy flavor of kimchi with delicate tofu.
Ingredients
- 480 g kimchi
- 225 g pork
- 0.5 pcs onion
- 2 pcs green onion
- 1 tsp ginger
- 1 tbsp garlic
- 1 tbsp soy sauce
- 1 tbsp sugar
- 1 tbsp sesame oil
- 2.5 tbsp gochujang
- to taste Korean red pepper paste
- 1 tsp sesame seeds
- to taste spinach pepper
- 510 g tofu
- 960 ml water

Cut the kimchi and pork into bite‑size pieces, thinly slice the onion and green onion. In a large bowl combine kimchi, pork, onion, green onion, ginger, garlic, soy sauce, sugar, sesame oil, gochujang, Korean red pepper paste, sesame seeds and spinach pepper. Mix thoroughly and let sit for 15 minutes.

In a medium saucepan bring 960 ml of water to a boil. Cut the tofu into two pieces, lower them into the boiling water, reduce heat and simmer for 5 minutes. Then transfer the tofu to a colander, let it drain and slice into pieces about 1.3 cm thick.

Heat a large skillet over medium‑high heat, add the prepared kimchi‑pork mixture and stir‑fry until the kimchi is soft and the pork is fully cooked, about 5–6 minutes.

Arrange the tofu slices on a plate, place the cooked kimchi‑pork stir‑fry in the center and serve immediately.
