Dubu Salad (두부 샐러드)

A simple, healthy, and refreshing Korean salad made with soft tofu, served with a fragrant soy sauce dressing. The combination of crisp leaf lettuce and tender tofu makes the dish light and nutritious.
Ingredients
- 2 pcs soft tofu
- 115 g leaf lettuce
- 4 pcs green onion
- 1 tsp garlic
- 4 tbsp soy sauce
- 2 tbsp vinegar (or lemon juice)
- 2 tbsp rice wine
- 2 tsp sugar (or Korean plum syrup)
- 1 tsp gochugaru
- 2 tsp sesame oil
- 4 tsp sesame seeds
- 960 ml water
Steps

Mix all sauce ingredients in a small bowl.

Rinse the leaf lettuce and let it drain.

In a medium pot bring about 4 cups of water to a boil, add the tofu, cover and simmer for 5 minutes over medium heat.

Carefully transfer the tofu to a colander, let it drain and cool.

Cut the tofu in half, then slice each half into pieces about 1.5 cm thick.

Place part of the leaf lettuce on a plate, then top with tofu slices.

Before serving, drizzle the tofu with the prepared sauce.
