Fanqie jidan mian (番茄鸡蛋面)

A very simple and tasty soup made from tomatoes, eggs, and noodles. Requires minimal ingredients and quick steps, perfect for lunch.
Ingredients
- 450 g tomato
- 3 pcs egg
- 2.5 tbsp vegetable oil
- 2 pcs garlic
- 0.75 tsp salt
- 0.25 tsp sugar
- 2 servings noodles
- 1 pcs green onion
- 365 ml water
Steps

Cut each tomato crosswise, drop into boiling water for a few minutes, remove the skin and coarsely chop.

Beat the eggs with 1 tablespoon of water until foam forms.

Heat 2 tablespoons of vegetable oil in a pan, pour the egg mixture, stirring until the eggs are fully set.

Add the remaining 0.5 tablespoon of oil, sauté garlic until fragrant, then add the chopped tomatoes and cook until soft.

Pour in 350 ml of water, bring to a boil and simmer for 2 minutes. Add salt, sugar and the cooked eggs, mix well.

Cook the noodles until done, rinse with cold water and drain.

Divide the noodles among bowls, pour the tomato-egg broth over them and garnish with finely chopped green onion.
