Ingredients
- 680 g potato
- 1 pcs egg
- 55 g cucumber
- 55 g carrot
- 5 tbsp mayonnaise
- 1 tsp salt
- 1 tsp sugar
- 1 tsp black pepper
- 1.5 tbsp lemon juice
- 1 tbsp raisins
- 0.25 pcs apple
- 2 tbsp onion
Steps

Peel the potatoes and cut them into pieces sized 2.5–4 cm.

Place the potatoes in a pot, cover with cold water, add salt and bring to a boil. Then reduce the heat, cover with a lid and simmer until tender.

Drain the water and mash the potatoes with a fork, leaving small chunks.

Boil the egg: place it in cold water, bring to a boil, turn off the heat, let it sit in the hot water for 12 minutes, then cool, peel and coarsely chop.

Halve the cucumber lengthwise, thinly slice into rounds, lightly salt, let it rest, then squeeze out excess moisture.

Thinly slice the carrot (lengthwise halve).

In a bowl with the mashed potatoes add mayonnaise, salt, sugar, black pepper, lemon juice, raisins, apple and onion. Mix well and adjust seasoning if needed.

Add the sliced cucumber, carrot and coarsely chopped egg, gently mix until evenly distributed.

If desired, garnish the salad by sifting the yolk over the top.
