Gilgeori Toast (길거리 토스트)

A vegetarian Korean toast, crispy on the outside and tender inside, filled with fresh vegetables and a fragrant omelette. Quick to prepare and requires minimal ingredients that are usually on hand.
Ingredients
- 2 pcs bread
- 100 g green cabbage
- 15 g carrot
- 15 g onion
- 2 pcs garlic chives
- 1 pcs egg
- to taste salt
- to taste ground black pepper
- 2 tbsp butter
- to taste sugar
- to taste ketchup
Steps

Thinly slice the green cabbage, onion, carrot, and garlic chives (cut into pieces about 3–4 cm long).

In a large non‑stick skillet, melt 1 tbsp butter over medium heat. Place both slices of bread and toast each side for 1–2 minutes until golden brown. Transfer the toasted bread to a plate.

In a small bowl, combine the chopped vegetables (saving ≈1/5 of them for garnish) with a pinch of salt and ground black pepper, crack the egg and quickly stir with a fork until homogeneous (about 20 seconds).

In the same skillet, melt the remaining 1 tbsp butter, pour in the egg‑vegetable mixture, spread it with a spatula into a round patty and cook for 3 minutes until golden brown. Carefully flip and cook the other side for another 2 minutes, adding a little more butter if needed.

Place the cooked egg‑vegetable patty on one slice of toasted bread, sprinkle a small amount of sugar, drizzle ketchup to taste, and top with the second slice. Serve immediately.
