Gyeran Bokkeumbap (계란 볶음밥)

A simple Korean dish made from boiled rice, eggs, and green onion. Quickly cooked in a skillet, it turns out aromatic, slightly crispy, and tender.
Ingredients
- 3 cups rice
- 3 pcs egg
- 3-4 pcs green onion
- 4 tablespoon vegetable oil
- 1 tablespoon soy sauce
- to taste salt
- to taste pepper
- 0.5 tablespoon sesame oil
- 0.5 teaspoon sesame seeds
Steps

Finely chop the green onion.

Beat the eggs in a bowl with a fork or chopsticks.

Heat a large skillet or wok over medium‑high heat, add 2 tablespoons of vegetable oil and part of the chopped green onion; stir‑fry until the onion becomes soft and fragrant.

Reduce the heat to medium‑low, pour in the beaten eggs, gently stir until they are almost set but still slightly runny. Transfer the eggs to a plate.

Increase the heat to medium‑high, add another 2 tablespoons of vegetable oil, then the remaining green onion; stir‑fry until the onion is soft and fragrant. Add the soy sauce and mix.

Add the rice and stir‑fry, constantly stirring and breaking up clumps, until the rice is evenly heated and slightly toasted.

Return the eggs to the skillet, thoroughly mix with the rice, breaking them up. Season with salt and pepper, then add sesame oil and sesame seeds.
