Haengbokan Saeu Saelleodeu (행복한 새우 샐러드)

Fresh aromatic salad with shrimp, Korean cucumber, pear, and a spicy mustard dressing. Perfect as a light appetizer or an elegant starter to a meal.
Ingredients
- 2 tsp spicy mustard powder
- 1 tbsp vinegar
- 1 tsp soy sauce
- 2 tsp sugar
- 0.5 tsp garlic
- 0.125 tsp salt (for dressing)
- 2 pcs Korean cucumber
- 0.5 pcs Korean pear
- 0.25 pcs red bell pepper
- 0.25 pcs orange bell pepper
- 10 pcs large shrimp
- 0.25 pcs lemon
- radish sprouts
- water
Steps

Mix the spicy mustard powder with 1 tbsp warm water, let it sit for 5‑10 minutes.

To the mixture add vinegar, soy sauce, sugar, minced garlic and ⅛ tsp salt (for dressing). Mix well and refrigerate.

Slice the cucumber and pear into thin rounds. If desired, cut the bell peppers into julienne strips.

Prepare a large bowl with ice water and place it next to the stove.

In a small pot bring 4 tbsp water to a gentle boil, add 1 tsp salt (for boiling the shrimp) and the juice of ¼ lemon. Add the shrimp and cook for 40 seconds until opaque.

Immediately remove the shrimp with a slotted spoon and transfer to the ice water to stop cooking. Drain.

If desired, cut each shrimp lengthwise in half.

Arrange cucumber slices, pear slices and the cooked shrimp neatly on a plate.

Drizzle the salad with the prepared mustard dressing, garnish with radish sprouts and a lemon wedge, if using.
