Hao you niu rou (蚝油牛肉)

A quick dish of tender beef pieces and fragrant king oyster mushrooms, stir-fried in a spicy soy sauce. Perfect for an Asian-style dinner.
Ingredients
- 370 g beef
- 4 tsp light soy sauce
- 1 tsp Shaoxing rice wine
- 1 tbsp water
- 1.5 tsp cornstarch
- 2 pinch salt
- 2.5 tbsp neutral vegetable oil
- 1 tsp dark soy sauce
- 3 tbsp unsalted broth
- 1 tsp ground black pepper
- 0.25 tsp sugar
- 10 pcs garlic
- 1 pcs king oyster mushroom
- 0.5 pcs sweet pepper
Steps

Cut the beef into cubes about 2 cm in size and place them in a bowl.

Add light soy sauce, Shaoxing rice wine, water, cornstarch and a pinch of salt to the bowl. Mix thoroughly so the marinade fully coats the meat.

Pour the neutral vegetable oil and mix so each piece of beef is coated with oil. Let it marinate while you prepare the other ingredients.

Prepare the sauce: combine light soy sauce, dark soy sauce, unsalted broth, cornstarch, ground black pepper, sugar and a pinch of salt. Mix well.

Heat a wok over high heat, add 1 tbsp of neutral oil and stir-fry the beef in a single layer until golden brown, stirring occasionally.

Transfer the cooked beef to a plate and set aside.

In the empty wok add the remaining 1 tbsp of oil, then add the halved garlic cloves. Stir-fry until golden.

Add the sliced king oyster mushrooms and sweet pepper to the wok and quickly stir-fry for about 30 seconds.

Return the beef to the wok and stir-fry together with the vegetables for another minute, until the meat is almost fully cooked.

Pour in the prepared sauce, mix thoroughly and cook until the sauce thickens to the desired consistency.
