Jiaoyan jichi (椒盐鸡翅)

Crispy on the outside, juicy inside, these Chinese chicken wings with salt and pepper boast a bright aroma of chili and garlic.
Ingredients
- 900 g chicken wings
- 1 tbsp soy sauce
- 0.5 tsp salt
- 2 tbsp corn starch
- 2 tbsp vegetable oil
- 2 pcs fresh chili
- 4 pcs garlic
- 1 pcs green onion
- 0.5 tsp salt and pepper mixture
Steps

Cut each wing twice with a knife, place in a bowl, add soy sauce and salt, mix well, and let marinate for 10 minutes.

Sprinkle the wings with corn starch and toss evenly to form a thin coating.

Heat vegetable oil in a large skillet over medium heat, arrange the wings in a single layer and fry without stirring until the bottom side turns golden, then flip and fry the other side. Transfer the cooked wings to a plate.

Drain most of the oil, leaving a little in the skillet, add fresh chili and garlic, and stir‑fry until fragrant.

Return the fried wings to the skillet, add sliced green onion and toss quickly so they are coated with the chili and garlic aromas.

Sprinkle the wings with the salt and pepper mixture, distribute evenly, and serve immediately.
