Jiaoyan youyu

Tender squid coated in a fragrant batter, fried to a golden crust and sautéed with garlic, ginger, and fresh chili, seasoned with a salt and pepper mix. A quick Chinese dish, perfect as an appetizer.

  1. Jiaoyan youyu step 1

    Mix 4 tbsp wheat flour, 0.25 tsp salt and pepper mix, and 3 tbsp water to obtain a semi‑liquid paste. Add it to the squid (250 g) and stir well to coat all pieces.

    In a separate bowl, combine the remaining 3 tbsp wheat flour, 3 tbsp cornstarch, and 1 pinch baking powder. Dredge each piece of squid in this dry mixture.

    Heat vegetable oil in a wok to 180 °C and fry the squid in batches until lightly golden. Transfer the cooked squid to a colander.

    Drain most of the oil, leaving only a thin film in the wok.

    In the remaining oil, quickly stir‑fry 2 tbsp garlic, 2 tsp ginger, and fresh chili to taste until fragrant.

    Return the squid to the wok, add 1 pcs sliced green onion, toss quickly and sprinkle the remaining 0.125 tsp salt and pepper mix. Serve hot.
