Jidan bing (鸡蛋饼)

A simple Chinese pancake with egg and green onion. The perfect batter ratio yields a tender texture and aroma. Pancakes can be served immediately or stored in the freezer.
Ingredients
- 100 g wheat flour
- 240 ml water
- 3 pcs egg
- 0.25 tsp salt
- 0.125 tsp ground Sichuan pepper
- 2 pcs green onion
- to taste vegetable oil
Steps

Mix the wheat flour and water until smooth.

Add the eggs to the mixture, then add salt, ground Sichuan pepper, and finely chopped green onion, and whisk thoroughly until smooth.

Heat a non‑stick skillet over medium‑high heat, lightly coat with a small amount of vegetable oil if needed, and pour about 4 tablespoons of batter, spreading it quickly across the surface.

Cook the pancake until it moves freely in the pan, then flip and fry the other side.

Remove the cooked pancake from the pan and set aside. Repeat the process with the remaining batter.

Serve the pancakes hot, plain or with a sauce to taste.
