A simple and fragrant recipe for stir-fried eggs with Chinese chives — a classic home-style Chinese dish that comes together in minutes. Perfect for a quick breakfast or a light dinner.
Ingredients
- 113 g Chinese chives
- 4 pcs egg
- 0.25 tsp salt
- 2 tbsp vegetable oil

Thoroughly rinse the Chinese chives, squeeze out excess water and cut them into pieces about 2.5 cm long.

In a large bowl lightly beat the eggs, then add the chopped chives and salt, mix well.

Heat the vegetable oil in a wok or skillet over high heat until it lightly smokes.

Pour the egg mixture with chives into the heated pan, let the eggs set without stirring, then push the set part to the edge, allowing the liquid portion to flow to the center for further cooking.

When most of the mixture has set, break up large clumps, stir until bite-size pieces form, then immediately transfer the dish to a plate.
