Kele jichi (可乐鸡翅)

Juicy chicken wings coated in a glossy caramelized Coca-Cola sauce are easy to prepare and remarkably flavorful. Perfect as an appetizer or a main dish.
Ingredients
- 9 pcs chicken wings
- 1 tbsp neutral cooking oil
- 330 ml Coca-Cola
- 6 pcs ginger
- 2 pcs green onion
- 2 tbsp light soy sauce
- 1 tbsp Shaoxing rice wine
- 0.25 tsp salt
- 0.125 tsp ground white pepper
- 1 pcs star anise
- 1 pcs bay leaf
- to taste sesame seeds
Steps

Separate each wing into three joint sections and pat them dry with a paper towel.

Heat the neutral cooking oil in a wok or pot, place the chicken wings in a single layer and fry over medium heat until lightly golden, turning occasionally.

Pour in the Coca-Cola, add ginger, green onion, light soy sauce, Shaoxing rice wine, salt, ground white pepper, star anise and bay leaf. Bring to a full boil over high heat.

Cover with a lid and cook over medium heat for about 15 minutes, turning the wings occasionally so they absorb the broth.

Remove the lid, increase the heat to maximum, remove the ginger, green onion, star anise and bay leaf. Let the sauce boil vigorously so that some liquid evaporates.

When the sauce thickens, toss the wings thoroughly so they are fully coated with the caramelized sauce.

Sprinkle the finished wings with sesame seeds and finely chopped green onion. Serve hot or at room temperature.
