Lachang fan (腊肠饭)

A simple way to prepare rice with Chinese sausage — a fragrant dish where juicy sausage, vegetables, and sauce are cooked together in one pot. Ready in 25 minutes without using a rice cooker or steamer.
Ingredients
- 4 pcs Chinese sausage
- 1 pcs carrot
- 4 pcs dried shiitake mushrooms
- 2 pcs green onion
- 2 rice
- 2 water
- 1.5 tbsp light soy sauce
- 0.5 tbsp dark soy sauce
- 0.5 tbsp oyster sauce
- 1 tbsp Shaoxing rice wine
- 2 tsp sesame oil
- 0.5 tsp white ground pepper
Steps

Rinse the sausage under running water, slice it diagonally into thin pieces. Dice the carrot, slice the dried shiitake (removing the tough stems) and finely chop the green onion.

Rinse the rice under running water, drain. Transfer the rice to a pot, add water and cook over high heat uncovered until the water evaporates to the level of the rice.

Reduce the heat to low, place the sausage, carrot and shiitake on top of the rice. Cover with a lid and steam for 10 minutes.

Remove the pot from the heat and let it rest under the lid for another 5 minutes.

In a small bowl, mix the light soy sauce, dark soy sauce, oyster sauce, Shaoxing rice wine, sesame oil and ground white pepper.

Remove the lid, add the green onion and pour in the prepared sauce. Gently stir with a spatula so everything is evenly distributed, and serve immediately.
