Málà Tǔdòu (麻辣土豆)

Potatoes fried to a golden crust and seasoned with an aromatic blend of five spices, chili, and salt. A quick and vibrant side dish that's easy to prepare.
Ingredients
- 900 g young potatoes
- 2 tablespoon vegetable oil
- 0.5 tablespoon chili flakes
- 0.25 tsp five-spice powder
- 0.25 tsp salt
- 1 piece green onion
Steps

Place the young potatoes in a pot, cover with cold water so that it covers the potatoes. Bring to a boil, then reduce heat and simmer until tender, checking with a fork (about 5 minutes).

Heat the vegetable oil in a large skillet. Add the drained potatoes and, using a glass, gently press each piece to create cracks.

Fry over medium heat until the first side turns golden, then flip and fry the other side until golden.

Sprinkle the potatoes with a mixture of chili flakes, five-spice powder, and salt. Garnish with finely chopped green onion and serve immediately.

Serve the dish hot.
