Oi Bokkeum (오이볶음)

A quick Korean side dish: lightly stir-fried cucumbers with garlic, green onion, sesame oil, and sesame seeds. Perfect as a light snack or accompaniment to a main course.
Ingredients
- 450 g cucumber
- 1.5 tsp salt
- 1 tbsp vegetable oil
- 1 tsp garlic
- 1 piece green onion
- 1 tsp sesame oil
- 0.5 tsp sesame seeds
Steps

Cut the cucumbers lengthwise in half, then slice thinly crosswise at a slight angle.

Sprinkle the sliced cucumbers with salt, toss, and let them sit for 10 minutes to release moisture.

Wait 10 minutes while the salt draws out moisture from the cucumbers.

Thoroughly squeeze the cucumbers to remove excess water.

Heat a pan over high heat, add vegetable oil and quickly stir‑fry the garlic.

Add the squeezed cucumbers, stir‑fry, constantly stirring, for about 2 minutes until they are just slightly cooked. Remove from heat.

Mix the cucumbers with finely chopped green onion, then add sesame oil and sesame seeds.
