Pai Huang Gua (拍黄瓜)

A refreshing Chinese salad where the cucumber is broken to absorb flavorful dressings. Quickly prepared, it features the bright taste of soy sauce, rice vinegar, and aromatic spices.
Ingredients
- 1 pcs cucumber
- 0.25 tsp salt
- 2 pcs garlic
- 1 tbsp soy sauce
- 0.5 tbsp rice vinegar
- 1 tsp sesame oil
- 1 pinch sugar
- to taste chili oil
- to taste Sichuan pepper oil
Steps

Place the cucumber on a cutting board, crush it with the flat side of a knife, rolling pin, or meat mallet until it cracks, then cut across into bite‑size pieces.

Transfer the cucumber to a bowl, sprinkle with salt, let it sit for 10‑12 minutes, then drain the released liquid.

In the bowl add soy sauce, rice vinegar, sesame oil, a pinch of sugar, minced garlic, chili oil and, if desired, Sichuan pepper oil. Mix thoroughly so the dressing evenly coats the cucumber.

Serve the salad immediately or let it rest for another 2 minutes before serving.
