Qingzheng Sanwenyu (清蒸三文鱼)

A healthy and aromatic dish ready in 10‑15 minutes. Salmon fillet is steamed with ginger and green onion, then topped with a sauce made from onion oil, light soy sauce, Shaoxing rice wine, sugar and white pepper.
Ingredients
- 2 pcs salmon fillet
- 1 pinch salt
- 3 pcs ginger
- 2 pcs green onion
- 70 g edamame
- 1 tbsp onion oil
- 2 tsp light soy sauce
- 0.5 tsp Shaoxing rice wine
- 0.5 tsp sugar
- 1 pinch white pepper
Steps

Cut the salmon fillet with several diagonal slashes at a 45° angle (without cutting through completely) and rub with salt.

Place half of the ginger and green onion in the steamer, lay the fillet on top, fill the slashes with the remaining ginger and onion, and add edamame on the sides.

Steam the fish over medium heat for about 5 minutes, until it becomes tender and fully cooked.

Prepare the sauce: in a saucepan combine onion oil, light soy sauce, Shaoxing rice wine, sugar and white pepper. Bring to a simmer until bubbles appear.

Place the cooked salmon and edamame on a serving plate, drizzle with the prepared sauce.
