Samgyeopsal Gui (삼겹살 구이)

Korean barbecue of fresh pork belly, grilled with aromatic vegetables. Served with a spicy sauce mixture and lettuce leaves, where each person assembles their own bite.
Ingredients
- 450 g pork belly
- 8 pcs garlic
- 4 pcs chili pepper
- 3-4 pcs green onion
- 60-120 g mushrooms
- 2 pcs lettuce leaves
- 16 pcs perilla
- 1 tbsp sesame oil
- 2 tsp sesame oil for sauce
- 0.5 tsp salt
- to taste black pepper
- 2 tbsp doenjang
- 1 tbsp gochujang
- 1 tsp sesame seeds
- 1 tbsp rice wine
- 1 tbsp water

Prepare the vegetables: peel and thinly slice the garlic, chili pepper, green onion, mushrooms (if using), and lettuce leaves.

Prepare the sauce by mixing sesame oil for the sauce, salt, black pepper, doenjang, gochujang, minced garlic, sesame seeds, rice wine, and, if needed, 1 tbsp water. If the mixture is too thick, add more water.

Heat the grill (or a flat pan) over medium heat. Cut the pork belly into bite-sized pieces.

Place the meat on the hot surface together with garlic, chili pepper, green onion, and mushrooms (optional). Grill, turning periodically, until the meat is fully cooked.

Serve immediately, wrapping pieces of meat and vegetables in lettuce leaves and perilla leaves, and dip into the prepared sauce.
