Tatsuta-age (竜田揚げ)

Tatsuta-age is a traditional Japanese dish in which pieces of chicken fillet are marinated in soy sauce with ginger, coated with potato starch and deep-fried to a crisp “powdery” crust. When served, the dish is garnished with lemon wedges and leafy greens, giving a fresh aroma.
Ingredients
- 400 g chicken fillet
- 15 g ginger root
- 2 tbsp soy sauce
- to taste potato starch
- to taste vegetable oil
- 1 pcs lemon
- to taste leafy greens
Steps

Step 1: Prepare the marinade by mixing soy sauce with grated ginger.

Step 2: Cut the chicken fillet into pieces about 3 cm long, immerse them in the marinade and let sit for 15 minutes.

Step 3: After marinating, coat each piece with potato starch.

Step 4: Heat the vegetable oil in a pot to 160 °C.

Step 5: Fry the chicken pieces one at a time: 2 minutes, then flip and fry for another 1‑2 minutes until they float up. Remove from the oil.

Step 6: Serve the finished dish with lemon wedges and leafy greens.
