Temaki-sushi (手巻き寿司)

Temaki sushi are small rolls hand‑rolled. They are made with fragrant rice, marinated horse mackerel, raw fish, vegetables and sauces, perfect for a festive table.
Ingredients
- 300 g rice
- 445 ml water
- 5 tbsp vinegar
- 9.5 tsp sugar
- 1.17 tsp salt
- 1 pcs horse mackerel
- 2 pcs eggs
- 0.5 tsp soy sauce
- to taste mayonnaise
- 80 g tuna
- 80 g salmon
- 70 g canned tuna
- 8 pcs roe
- 1 pcs cucumber
- 1 pcs avocado
- 30 g onion
- 1 piece ginger
- 2 sprig green onion
Steps

Rinse the rice, cook it in water, add vinegar, sugar and salt, stir and let it rest.

Prepare the marinade: mix vinegar, sugar and salt, immerse the horse mackerel fillet in it and leave for 15 minutes.

Beat the eggs with sugar, soy sauce, a pinch of salt and water, fry the mixture, then cut into strips.

Slice raw tuna, salmon, canned tuna, roe, cucumber, avocado, onion, ginger and green onion. Prepare mayonnaise and soy sauce for drizzling.

Form temaki: on a nori sheet place rice, add marinated horse mackerel, omelette, sliced fillings, drizzle with mayonnaise and soy sauce, roll into a hand roll.
